I am a huge fan of the Tour de France and purposefully subscribed to Peacock for this year's tour. How do I record the stage in advance or restart it if it's still live?
Although Peacock does not have a default screen recording function, let alone cloud DVR (digital video recorder) storage, you can record shows on Peacock with a third-party screen recorder.

Step 1. Open the show you want to record on Peacock and launch EaseUS RecExperts.
Step 2. Go to the recording app's panel, click the Record screen (computer icon) at the top, and customize the recording region, webcam, system, mic, and other settings.
Step 3. Click the Rec button. A confirmation popup will appear. Click Continue to start recording.
Step 4. A countdown timer starting from 3 will appear on the screen. To pause or stop recording during the process, click the button on the toolbar.
Step 5. It will automatically launch the Peacock record with a file list right on the screen. This provides some basic video editing features, like an audio extractor. Edit the video if you need to.
