You can record games on Peacock by installing a third-party recording tool.

Learn how to record games on Peacock and watch offline using EaseUS RecExperts:

Step 1. Open the Peacock gameplay you want to record.  Download and launch EaseUS RecExperts.

Step 2. Go to Settings from the upper right panel, click Game, and change some game overlay options.

Step 3.  From the left panel, click Game mode (the controller icon), click Select Game, and choose a window to record. Then, click the Rec button.
